I always use Duncan Hines cake mixes. You will need everything you need for a regular pud cake. The actual directions are on the side of a pineapple supreme box.
-Mix (eggs, oil, water also per mix directions)
-Brown sugar and melted butter mixture
-1 can crushed pineapple
-12 maraschino Cherry's (sliced in half )
1. Make cake mix per directions on box . Melt butter and mix with brown sugar until all lumps are gone. open can of pineapple drain. I also put some of the juice in to the brown sugar mixture to make it go a little further.
2. Spoon a small amount of the brown sugar mix in to each muffin tin. Place half a cherry in the center.
3. Spoon small amount of crushed pineapple in to each tin. (pan on right) Last but not least spoon the batter in to each tin almost filling to top.(pan on left) bake per box directions usually 350 for 20-25 Min's
4.Now the tricky part! after cupcakes come out let cupcakes cool on wire rack about 7-10 Min's. Take a butter knife and run around inside edge of each tin. Take a cookie sheet put on top of cupcake tins and flip so pud cakes will be right side up on cookie sheet. TA-DA!!!! They are SO cute!

Yay! I love that you have a blog about baking!! :) I always seem to screw it up when I try to bake, but your pineapple upside down cupcakes look so cute and easy to make...I'm definitely going to try them!
